So … how was your holiday season? Some call January the “Let Down Month”, others breathe a sigh of relief that Santa has returned to the North Pole and pumpkin spice EVERYTHING is in hibernation until the end of the year. For me the holidays were busy with dinner and catering orders. I’ve included a few so you can feel my pain lmbo
But all jokes aside, I am extremely grateful for the opportunities I had last year and am excited about what the new year is going to bring!

A poll conducted between December 16 and December 21 showed that improving physical health and eating healthier are still the top two resolutions in America (38%). I can’t help you with the physical health part but eating healthier? I GOT YOU COVERED!
You don’t have to only eat dry salad and poached chicken. In fact, I believe that is a big reason why so many get defeated when trying to include healthier options into their diet. Healthier food doesn’t mean boring or bland.
Recipes
● 1 15 oz can chickpeas rinsed and dried
● 1 c cubed butternut squash
● 1/2 tbsp avocado or olive oil
● 1 tsp paprika
● 1 tsp garlic powder
● 1 tsp onion powder
● 1 tsp dried thyme
● 1 tsp dried parsley
● 1/4 tsp sea salt
● 5-6 c chopped Kale
● Drizzle of avocado or olive oil
● 1 tsp lemon juice
● 1/4 c pumpkin seeds
● 1/4 c dried cranberries
● 1-½ cups of vegan mayonnaise
● ¼ to ½ cup non dairy milk (any kind)
● 1-½ tsp of apple cider vinegar
● 3 cloves of crushed garlic or 2 tbsp of garlic powder
● 1 tbsp dried parsley
● 1 tsp dried dill
● 1-½ tsp onion powder
● ¼ tsp paprika
● ¼ tsp black pepper
● Salt to taste
Preheat the oven to 425 F. Toss butternut squash and chickpeas in paprika, garlic powder, onion powder, thyme, parsley, ½ tbsp olive oil and sea salt. Spread on a parchment lined baking sheet and cook for 25 minutes, tossing once halfway.
Kale:
In a large bowl, drizzle kale with lemon juice and remaining oil and massage with hands until tender and reduced in size.
Ranch Dressing:
Mix all ingredients together in a bowl. If it is too thick, you can thin it out using a little more non dairy milk.
Assemble:
Place kale in a large bowl and toss with half of the ranch dressing. Top with the butternut squash, chickpeas, pumpkin seeds and cranberries and add more dressing if desired. Enjoy!
Baked Salmon Cakes
INGREDIENTS
● 2 cans of salmon
● 1 egg
● 2 tbsp Worcestershire sauce
● 2 tbsp mustard
● 1/2 tablespoon Old Bay Seasoning
● 3 tbsp diced onion
● 3 tbsp diced peppers (any color)
● 3 tbsp diced celery
● 1 tbsp lemon zest
● 1 tbsp lemon juice
● 1/4 cup mayonnaise
● ⅓ cup of bread crumbs
● 1/4 teaspoon kosher salt
● 1/4 cup chopped fresh parsley
● Drizzle of avocado or olive oil
● Preheat your oven to 350 degrees. Spray a cookie sheet with nonstick spray or line with parchment.
● Open cans, drain and empty contents into a medium bowl. Clean away any skin or bones and transfer the cleaned salmon into a separate bowl.
● Add the remaining ingredients and mix thoroughly
● Divide the mixture as evenly as you can, making five or six balls. Transfer the balls to the cookie sheet and press them down until they are about 1/2 inch thick. Drizzle with the oil before baking.
● Bake until evenly browned, about 20-25 minutes. Serve warm.
